I love me a good lemon curd! My neighbour always makes the best and so she gave me her recipe today. I quickly whipped up a batch to giveaway as chrismtas gifts. So here is her easy recipe (it’s from the NZ Woman’s Weekly magazine 31 March 2003). Put a pretty ribbon on it or make a fancy label for it (I just write on mine with a permanent marker) and you have yourself some easy yummy gifts.
This recipe makes about 700ml lemon curd.
4 large lemons -from a backyard tree are the yummiest!
100g butter – cut into small cubes
2 cups sugar
5 beaten free range eggs
Zest the lemons and juice them. Pour the juice into a large glass container.
Add the beaten eggs, sugar and cubed butter. Whisk together.
Put in the microwave for 30 second bursts. Take out and whisk then put back in for another 30 seconds. Repeat until sugar dissolves and mixture thickens. Mine took 7.5 minutes but it could have done another 30 seconds or even a minute without harm.
Pour into sterile jars (I put mine through the dishwasher). Pop on the lids while hot.
Once cool keep in the fridge. Will keep for about two weeks.
Enjoy your lemon curd on toast, as a pie filling, on its own! or however you like to have it. Don’t give it all away don’t forget to save a jar for yourself!
