You know how companies sell that super expensive but oh so yummy flavoured olive oils and we pay heavily for them? Well thanks to Wendyl the green goddess I now know how to make flavoured oils too. I made an oregano version as a Christmas gift but you could add whatever herbs you like. It’s so tasty I really must make some for our pantry.
1/2 bunch oregano or rosemary, or thyme, or basil, or dill or whatever herb you like or chillis or citrus or a combination of several herbs
5 black peppercorns
2 strips of lemon peel
1 garlic clove, crushed
1 litre really good quality extra-virgin olive oil
Put the herbs, peppercorns, lemon peel and garlic clove in a sterilised bottle then add the olive oil.
Leave in a dark place for 2 weeks.
Use over pasta, salads or with meats.
