Double chocolate ice cream

Double chocolate ice cream doesn’t that sound fantastic? I think this might be the best ice cream I’ve ever made. Actually my Baileys chocolate ice cream is freaking amazing but it’s not really family friendly so this is the best family friendly ice cream I’ve made to date.

Double chocolate ice cream


4 free range eggs separated

1/4 cup caster sugar

1/4 cup caster sugar

1 tsp vanilla essence

300ml cream

1 batch of chocolate sauce

100g chocolate chips

Separate the egg yolks and whites into separate bowls.

Bet the egg whites until stiff peaks. Add 1/4cup sugar one teaspoon at a time beating well in between adding sugar.

Add 1/4 cup sugar to your egg yolks and beat well until thick and creamy.

Gently fold the yolks into the white and add vanilla essence.

Bet the cream until thick.

Fold the cream, chocolate sauce and chocolate chips into the egg mixture.

Pour the mixture into the ice cream machine. Run the machine until the ice cream is frozen.

Make sure the chocolate sauce (mine was still warm) is completely cold before you add it to the ice cream or it wont freeze in the ice cream machine. If this happens just pop it into a container and put it in the freezer overnight and it’ll be frozen in the morning.

Enjoy your ice cream on it’s own, over crumble, with cheesecake or with cake. What’s your favourite flavour?
