Banana and cranberry muffins

I’m all about muffins at the moment and have made several batches for eating hot, cold and I have loads in the freezer too. I’m also all about using ground almonds instead of flour and honey instead of sugar. So yummy and this freezes really well. This recipe is based on banana wholemeal muffins from the muffin bible. Just be aware that the muffins won’t rise as much and so you can fill the muffin tins a bit higher. Recipe makes about 40 mini muffins.

cranberry_low_sugarBanana and cranberry muffins

2 ripe bananas
1 free range egg
75g melted butter
1/2 tsp baking soda
1/2 cup hot milk
1/2 cup wholemeal flour
1 cup ground almonds
2 tsp baking powder
1/2 tsp speculas spice or 1/4 tsp cinnamon and 1/4 tsp nutmeg
1/2 cup honey
1/2 cup dried cranberries
Mash bananas and add egg. Mix together.
Add melted butter and baking soda dissolved in the hot milk.
Add the rest of the ingredients and mix until just combined.
3/4 fill really well greased muffin trays. Cook at 200C for 15-20 minutes.
So yummy. John just loves mini muffins. Actually who doesn’t!

    Here’s a recipe for you from Australian Healthy Food Guide. Great magazine 🙂

    Rhubarb and Date Muffins.
    300g rhubarb, 2 tablespoons brown sugar, 21/4 cups SR flour, 1 tsp cinnamon, 1/2 cup caster sugar, 2 eggs beaten, 200ml skim milk, 100g reduced fat table spread,melted, 1/4 cup apple sauce, 70g dates, chopped.

    Heat oven 200C. Mix rhubarb and brown sugar and place in oven proof dish. Bake 15 mins, cool.
    Put flour in large bowl with cinnamon and sugar. Beat eggs, milk, spread and apple sauce together. Combine with flour, add rhubarb and dates. Do not over mix.
    Place in muffin pans and bake for 25 mins or until risen and golden brown.
