This recipe has been adapted from a pear and honey muffins recipe (which is also super yummy) from the muffin bible.
Apple, almond and honey muffins
(makes about 40 minis)
1 free range egg
1 cup natural yoghurt
1/4 cup lemon juice
50 g melted butter
1/2 cup honey
1 cup wholemeal flour
1 cup ground almonds (almond flour)
1 tsp baking powder
1/2 cup brown sugar
Peel, core and dice the apples. I used my apple peeler machine and then puréed the apples in a blender. Put the puréed apples in a bowl then add all the ingredients one at a time gently mixing them together.
Fill well greased muffins trays and bake at 180C for 15-20 minutes or until golden brown.
Lately when I’ve been making muffins I’ve been filling this cute bear mould for John. He loves having his own special muffin.
These muffins are yummy hot or cold and also freeze really well. Enjoy.
