Made these super yummy almond and fruit truffles today. I adapted the recipe from the fantastic the Gawler Foundation Eat well: be well cookbook that my brother and sister got me for my birthday. The book is beautiful with so many amazing whole food plant based recipes. Which I’m all about!
Almond and fruit truffles
1 1/2 cups almond flour (ground almonds)
2 cups dried figs (or dates, cranberries or any other dried fruit combo)
2 Tspns vanilla essence
1/4 cup shredded coconut
2-3 Tspns rich Dutch cocoa (optional)
Chop the figs into quarters and remove the “tails”
Process the figs in the food processor till it forms a large ball
Add the almond flour, vanilla essence and coconut. Process until the mixture balls together.
Take a heaped teaspoon of the mixture into your hands and roll into a ball.
Sprinkle cocoa or almond flour on the outside to stop it sticking. Or for a stronger cocoa flavour roll the balls in it.
Makes about 32 small balls.
These are super rich so you’ll want to keep the balls small.
Keep in a sealed jar in the pantry. Enjoy.
I’m loving these and will keep them in the pantry so I can have a sweet fix whenever I need one. Also will only need one or two instead of a whole block of chocolate. hehe.
