When I roasting beetroot for my beetroot ice cream Hugh mentioned to use tin foil (which I do own but never ever use) so I though there must be a better choice. So here is my eco/ reusable tin foil substitute. I simply covered my roasting dish with an oven tray. This also works great on stopping lasagna from burning on top. So simply cook the food with the tray on then towards the end take the tray off to brown the top of a meal. So simple and no waste.
