Quinoa

We’ve been eating lots of quinoa; it’s so super yummy and considered a super food. It’s really versatile and you can use it anywhere instead of rice or pasta/ noddles or even muesli/ porridge or in bread. You can buy it in different colours and types; puffed, raw or as flour. I like to make lots of it so that we have enough in the fridge for a few days or you can freeze it. It’s more filling than rice so you’ll east less of it which is great because it costs a bunch more than rice but it is so worth it.

quinoa_nz_cookingHow to cook quinoa;

Wash the quinoa carefully and check for stones
Basically cook quinoa like you’d cook rice.
Cover with water and boil until soft; this takes about 15 minutes.
Or easier still throw it in the rice cooker and cook like normal. For 1 cup quinoa add 1 1/4 cups water.

Enjoy this yummy food there is no need to be afraid. We often cook some up then stir fry heaps of vegetables with spices and eat. So easy, tasty and filling. Quinoa freezes really well so I always cook extra and freeze batches in glass for later use.

    Yum! We love quinoa. I often eat it with roast veggies, but I am looking forward to more quinoa salads for summer 🙂

      I know what you mean I love it too. My favourite at the moment is quinoa with raw greens from the garden with an olive oil, avocado, lemon/ orange juice dressing so yummy Mx
