Home made pizza

Before John was born we always had pizza on a Friday night but it was actually a waste of money so we started making our own with store bough pizza bases which are pretty cheap, easy and yummy. Last week I thought I will try to make my own pizza base. Mr Ecochick used to work in a pizza place (was yummy – free pizza just the way I liked it!) so we used his knowledge to make our own pizza base. This recipe will make 3 large pizzas.
3 cups flour (I used 2 cups high grade and 1 cup wholemeal)
2 T sugar
2 T yeast
1 tsp salt
1 1/2 – 2 cups water
Add all the ingredients into a mixer (good old kenwood) and let the machine mix all the ingredients together. Turn up the speed of the mixer and let it knead the dough for 5 minutes. Put the dough in a warm place to rise for half an hour. Then roll out the dough into any shape you like – we made several big square pizzas. Add your toppings then cook at 200C for 20-30 minutes till cooked.  
I basically opened the fridge and pulled everything out to be added to our pizza. We started with a layer of homemade pizza sauce, then cheese, pineapple, olives, sundried tomatoes, fresh spinach, avocado, mushrooms, and topped with more cheese and Parmesan. Add anything and everything you can imagine to the pizza and enjoy.
