Curried eggs

 I had a wonderful high tea with some girlfriends today.
I love getting dressed up and having high tea 
(well more just little muffins and other yummies on pretty plates).
I made some mini brownies, mini muffins, curried eggs and my girlfriend made some amazing feijoa cake with cream cheese icing. 
When I was younger my mum always made super yummy curried eggs. 
They are always a favourite and always super popular. 
So now I make curried eggs. 

Curried eggs

What you’ll need:
12 free range eggs
3T mayonnaise
1T whole grain mustard
1T curry powder 
1T paprika  
1T ground coriander seeds (optional)
Fresh coriander or parsley for topping
 Hard boil the eggs.
Once cooled cut the eggs in half and scoop out the yokes. 
 Mush the yokes with a fork.
Add the mayonnaise, mustard, paprika, curry and ground coriander seed.
Mix together.
Fill the egg whites with the mixture. 
Add chopped coriander or parsley as garnish.
