Banana pikelets have been the talk of town so when I had one super old brown/ black smelly banana that was only good for cake or muffins so I thought I’d give banana pikelets a go.It couldn’t be easier or healthier.
To make banana pikelets;
2 free range eggs
Mash the banana in a bowl and add the eggs and mix well. Spoon some of the very runny mixture onto a well oiled pan or sandwich press. When bubbling occurs flip the pikelets over. We sprinkled a small amount of cinnamon sugar on top rolled up the pikelet and in she goes. Yummy.
Just a note you need to use fresh bananas (the darker the better) I tried this with defrosted leftover bananas but it doesn’t really work properly so best to make this recipe as a great way to use up black bananas. nomnomnom.
