This sauce is the basis for pretty much everything Mr Ecochick cooks. Well everything Italianish. This sauce is very versatile and can be used on its own over filled pasta or add mushrooms, carrots, lentils, vegetarian mince and top with cheese for a wonderful spaghetti bolognese or use as a pizza sauce or any other way you’d like.
1 small onion
1-2 cloves of garlic
1 can tomatoes
¼ tsp paprika
¼ tsp ground coriander seed
Pepper and salt to taste
10 fresh leaves (1T dried) Basil
10 fresh leaves (1T dried) oregano
Finally dice the onions, fry in plenty of olive oil when cooked add spices and garlic fry for a minute then add tomatoes. When bubbling add the herbs.
To make a pasta sauce cover and simmer for 10 minutes.
To make a pizza sauce uncover and simmer for 20 minutes stirring so it doesn’t burn.
